Apricot Energy Bars

We're having another stormy day here in New England and the boys are home from school, again, for the last "tentative" snow day of the school calendar. (The start of summer vacation is now knocking on July's door.) Looking for something to do, Chip asked if he could bake something... and luckily, I had just the perfect recipe for him -- an Apricot Energy Bar, (paleo, of course). These are adapted from Alana's Pantry. We didn't have pecans or dark choc chips, so we substituted with walnuts and dried cranberries. As you can see, they came out awesome! These are so, so easy to make and will fit nicely in a jersey pocket on a ride! (If winter ever ends.)

APRICOT ENERGY BAR
Ingredients
  • 1 cup dried apricots
  • 2 cups walnuts
  • 2 eggs
  • 1 tbsp vanilla
  • 1/4 tsp salt
  • 1/2 cup dried cranberries
In a food processor blend the dried apricots and walnuts until crumbly. Add eggs, vanilla, and salt. Blend to combine. Fold in dried cranberries (or chocolate chips). Spread the mixture into an 8"x8" baking pan. Bake in preheated oven at 350F for 25 minutes. How easy is that?
